Pu-erh is one of the most intriguing Chinese teas. This tea is “alive” in the sense that it gets its special flavor through the process of microbial fermentation, similar to cheese and wine. For ages now pu-erh tea has been used as a healthful beverage in traditional Chinese medicine. Now scientific studies show proof that pu-erh tea can help reduce blood cholesterol and fat accumulation.
Pu-erh typically smells of wet wood, wet earth, dried fruit and has almost none of the astringency that is typical to black or green teas. It’s name comes from Pu-erh prefecture in China, where this tea is traditionally grown and produced.
